
Chicken *Mushroom Rice:
2 chicken breasts
1/2 - 1 Cup Rice
Can *Cream of Mushroom Soup
Cup Sharp Cheddar- Approx.
Cook the rice with a bit of butter and a splash of lemon juice. (rice takes about 20 minutes to cook)
Slice the breasts up and fry them in a tiny amount of oil in a saucepan.
When they're cooked through (and possibly even browned a bit), reduce heat, add can of *mushroom soup, and let sit.
Serve layered: Rice, chicken *mushroom mixture, top with cheese.
Makes four generous portions.

*if you don’t like mushroom you can sub in cream of broccoli, celery or cheese soup.
Chicken Curry Alfredo:
2 Chicken Breasts
2 Cups Penne
Jar Prepared Alfredo Sauce
Slice the chicken, saute it, add sauce, doctor with spices and most importantly add a heaping spoon of curry powder. Add to penne.
Serve.

Inexpensive Goulash - feeds 4 with leftovers for under $3
1/2 lb. hamburger
2 Cups elbow macaroni
1 1/2 to 2 cans tomato paste
garlic & onion powders
salt & pepper
Boil elbow macaroni & drain
Brown hamburger in a large skillet (so you can mix everything together in it afterwards.)
Season with a shake of garlic powder and a couple shakes of onion powder salt and pepper to taste. Drain the fat and add the tomato paste.
(You may want to thin the tomato paste by adding a splash of water)
Mix well with the hamburger.
Add the macaroni and some more salt and pepper.
Heat a few minutes. (Careful not to scorch the tomato paste.)
